Rick Skillman opened The Rib Trader (located in the Ralphs parking lot on the south end of town) about 20 years ago, and it’s remained a local hangout for ribs and live music since. The place is big with the surf and lifeguard crowd, and according to Skillman, every visiting out-of-town surfer who’s passed through San Clemente has stopped in, including Kelly Slater, Shaun Tomson and Kalani Robb. But rib lovers had better get their fill soon, because Skillman, who also owns the shopping center, says that they’ll be tearing both the restaurant and Ralphs down by the end of the year to make room for a brand-new shopping center. But not to worry, a rebuilt Rib Trader is part of that plan.
