These guys know what they’re doing. They know what they’re doing picking a bold name like Tina & Vince’s Italian Delicatessen. They know what they’re doing with the sign warning patrons that the act of Italian cooking includes yelling and cursing. And, most importantly, they know what they’re doing in the kitchen.
The Italian sub from Tina and Vince’s is no-frills and spot-on. Freshly sliced prosciutto, ham, salami, capicola and provolone are amply piled onto a chewy, thin hoagie roll. Oil and oregano are the only dressing, and a mild giardiniera adds tang and texture. The cheese and prosciutto melt, while the salami and capicola provide spice.
